Born in Gwangju, head chef Dana Choi’s passion for her home country’s cuisine was apparent from a young age. Her journey began studying Korean royal cuisine before moving to London where she worked at the two Michelin-starred restaurant The Square, under Phil Howard, as well as Jinjuu Soho with Korean chef Judy Joo.
Now at the helm of Jang, Dana balances tradition with innovation with her own interpretations of Korean and Japanese cuisine using the best of British ingredients.

Jang is located on the mezzanine of the Grade I listed Royal Exchange, just by Bank Station in The City of London.
